Charo Carmona is the head chef of Arte de Cozina in Antequera. She was taught to cook from an early age by Paca Santiago, a woman she calls her second mother. Paca taught her how to cook traditional Spanish cuisine but most of all she awoke a passion for food in Charo which enabled her to go on the create modern, tasty, healthy food that uses fresh seasonal ingredients, while preserving the traditions and culture of the region.
